Paleo Pancakes for Gluten Free Living!

When I made the committment to go completely gluten, wheat and grains free for my health and I can tell you how happy I was to find this paleo pancake recipe! So many people seem challenged by removing gluten, wheat and grains from their diet. This challenge can make eating a  real struggle and it definitely does not have to be that way at all!  By simply eat real food can make everything easy.  I know, I hear what you are thinking. OMG I have to cook? Well, is a word Yes!

Yet cooking doesn’t have to be hard.  I only can say that to you because I do not consider myself to be a great cook however I have found a few dishes that I really enjoy and make them on a regular basis.  Cooking them has become easy, and really enjoyable!  These Paleo Pancakes are a great example of this.

Now one of my favorite Sunday morning meals is Paloe Pancakes.

Here is my favorite Pumpkin Paleo Pancakes recipe:

Paleo Pancakes Ingredients:

  • 4 eggs
  • 1/2 cup pumpkin puree- (I use organic pumpkin and sometimes even use organic pumpkin pie puree.  If I use the pie puree I eliminate the pumpkin spice below)
  • 2 tablespoons butter or coconut oil, melted
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • pinch salt
  •  1-2 Tbsp of coconut flour

Steps

Now I combine the eggs, ( I always put them in first just to be sure all eggs are good prior to adding any other ingredients), then I added the organic pumpkin, and vanilla extract together.  Then sift the pumpkin pie spice, cinnamon, and baking soda and add into the wet ingredients.

Melt 2 tablespoons of butter in a large skillet over medium heat and then, mix the butter into the batter.
Grease the skillet and spoon the batter into the skillet to make pancakes of your desired size. When a few bubbles appear, flip the pancakes once to finish cooking.
Serve with grass-fed butter and cinnamon
